Chicken Gyro Bowls Recipe

These chicken gyro bowls are an easy 20-minute dinner with rotisserie chicken, rice, fresh veggies, and creamy tzatziki. Perfect for weeknights or meal prep.

Ingredients

Tzatziki

Chicken Gyro Bowl Assembly

  • 2-3 cups cooked chicken I used a rotisserie chicken
  • 1-2 teaspoon Greek seasoning blend recipe below or use your favorite
  • 2-3 cups cooked white rice
  • 2 cups baby arugula
  • 1 avocado, sliced
  • feta, tomatoes, cucumbers, olives, pickled onions
  • dill, parsley, chives, for topping

Instructions

Tzatziki

  • Squeeze the excess liquid out of the grated cucumber and add to a mixing bowl.
  • Add remaining tzatziki ingredients to bowl with cucumber and mix to combine.
  • Set aside or store in the fridge until ready to use. The longer it sits, the better it gets.

Chicken Gyro Bowl Assembly

  • Toss the deboned chicken with Greek seasoning.
  • Begin with a base of cooked rice. Add chicken and arugula. Top with veggies of choice. Dollop a heaping scoop of the tzatziki and sprinkle with fresh herbs. And, don't forget a healthy shower of crumbled feta. It's soooo good!

Notes

Greek Seasoning Blend
  • 1 tablespoon dried oregano
  • 2 teaspoon kosher salt
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ teaspoon fresh ground pepper
 
For a simple, foolproof way to cook rice, simply:
  • Rinse the rice several times until the water runs clear.
  • Add fresh water until it reaches your first knuckle above the rice (about 1 inch).
  • Bring to a boil, then reduce to a simmer, cover, and cook for 20 minutes without peeking.
  • Remove from heat and fluff with a fork.
