Cook the bacon in a large skillet over medium heat until the fat renders.
Once the bacon is cooked, add the onion and mushrooms and cook until softened.
Add the kale, garlic, sun-dried tomatoes, and chicken broth. Simmer until the kale is wilted.
Add heavy cream, parmesan, and shredded chicken.
Simmer until the chicken is warmed through and the sauce has thickened slightly. Season with kosher salt and fresh ground pepper, then toss with the zucchini noodles.
Notes
Tips:-Use any kind of noodle you like. The sauce is magic. Regular pasta would work, spaghetti squash would be perfect. Whatever you like!-Spinach could easily be subbed for the kale.-Don't forget a few red pepper flakes to give it a little zing!
