Energy Bites Recipe

These no-bake energy bites taste like salted caramel and come together in just 10 minutes with minimal ingredients. Perfect for snacks or breakfast on the go.

Ingredients

  • 1 packed cup Medjool dates, pitted and rough chopped
  • 1 cup roasted cashews, unsalted
  • 2 tablespoon hemp hearts
  • 2 tablespoon chia seeds
  • ½ teaspoon vanilla bean paste
  • ½ teaspoon kosher salt

Instructions

  • Add all ingredients to a food processor. Roughly chop the dates first to help everything blend smoothly.
  • Pulse until the mixture is finely ground and begins to clump when pressed between your fingers. It will look sandy at first — that’s normal.
  • Scoop about a tablespoon of the mixture and press firmly between your hands, then roll into a ball.
  • Chill briefly if desired, then enjoy.
