Ingredients

  • 2 tablespoon butter
  • 1 shallot
  • 3-4 cloves garlic minced
  • ¼ teaspoon dried thyme leaves
  • ¼ teaspoon dried oregano
  • ½ cup sun dried tomatoes drained and chopped
  • 2 (15 oz cans) butter beans
  • 1 cup broth
  • ¾ cup heavy cream
  • ½ cup parmesan cheese grated
  • 1 lemon zest from half and juice from the whole lemon
  • 2 cups baby spinach loosely packed
  • kosher salt and fresh ground pepper to taste
  • crusty bread for dipping

Instructions

  • Melt the butter in a large skillet over medium heat. Add the shallot and cook until softened, about 3–4 minutes.

  • Stir in the garlic, thyme, oregano, and red pepper flakes. Cook for 30 seconds until fragrant.

  • Add the sun-dried tomatoes and cook for 1 minute.

  • Stir in the butter beans and chicken broth. Bring to a simmer and cook for 5–7 minutes.

  • Using the back of a wooden spoon, lightly mash some of the beans against the side of the skillet to help thicken the sauce.

  • Reduce the heat to low. Stir in the heavy cream, parmesan cheese, lemon zest, and lemon juice.

  • Add the spinach and cook until wilted, about 1–2 minutes.

  • Season with kosher salt and freshly ground black pepper to taste.
  • Serve warm with crusty bread for dipping.
