Equipment

  • large cast iron skillet or outdoor griddle
  • mixing bowl
  • measuring cups
  • measuring spoons

Ingredients

Burger Sauce

  • 1 cup mayonnaise
  • ½ cup dill pickle relish
  • ¼ cup yellow mustard
  • 2 tablespoon ketchup
  • 1 tsp smoked paprika
  • kosher salt and fresh ground pepper, to taste
  • cayenne, optional for a kick

Smash Burgers

  • 1 lb ground beef
  • all-purpose seasoning to your taste
  • 6 (6-inch) flour tortillas
  • ¾ cup cheddar cheese shredded
  • shredded lettuce, minced red onion, and dill pickle chips for topping

Instructions

  • Make the sauce: Mix sauce ingredients together in a mixing bowl and store in fridge until ready to serve.
  • Prep the beef: Season the ground beef with all-purpose seasoning and divide into 6 equal portions (about 2½ ounces each).
  • Build the tacos: Place one portion of beef onto each tortilla and press it into a thin, even layer, leaving a small border around the edges.
  • Cook meat-side down: Place the tacos beef-side down on a hot griddle or skillet. Cook for 2–3 minutes, or until the beef is well browned and crispy.
  • Flip and finish: Flip the tacos, top with cheese, and cook for another few minutes until the beef is cooked through, the tortilla is crisp, and the cheese is melted.
  • Serve: Top with shredded lettuce, onions, tomatoes, and plenty of burger sauce. Fold and enjoy
