1rotisserie chicken, deboned and meat roughly choppedsave the bones for bone broth!
1cupmayonnaise
1cupcelery, diced
1cupred onion, diced
½ cupchives or green onion tops, chopped
¼ cupapple cider vinegar
2tablespoonsmoked paprika
1tablespooncelery seed
juice of 1 lemon
kosher salt and fresh ground pepper, to taste
Instructions
Mix all ingredients together in a large mixing bowl.

Notes
Add finely diced jalapeños to the chicken salad mixture for a little kick and even more crunch!Although you can eat this salad as soon as it's mixed, it's much better the next day!
