Sweet Corn Pasta Recipe

Sweet corn pasta with crispy bacon, zucchini, and parmesan in a creamy corn sauce made from blended sweet corn. An easy summer pasta ready in about 30 minutes.

Ingredients

  • 4 slices bacon, diced
  • 1 shallot, minced
  • 2-3 ears fresh sweet corn, shucked and kernels removed
  • 3-4 cloves garlic, minced
  • 1 med zucchini, diced
  • 4 oz cream cheese, softened
  • 1 lemon, zest and juice
  • ½ cup parmesan cheese, grated I measure with my heart!
  • 8 oz long pasta, cooked according to package instructions save ½-1 cup of the pasta water
  • 2 tablespoon chopped fresh soft herbs such as basil, chives, or parsley optional
  • kosher salt and fresh ground pepper

Instructions

  • Cook the bacon – Render the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside for topping later.
  • Sauté the shallots – Add the shallot to the bacon fat and cook for a few minutes until softened.
  • Cook the corn and garlic – Stir in the corn and garlic and cook for 4–5 minutes. Remove the corn mixture from the skillet and set aside.
  • Blend the corn sauce – Add half of the corn to a blender along with the cream cheese. Blend until smooth to create a naturally creamy sauce.
  • Cook the zucchini – Add the diced zucchini to the skillet and cook for about 4–5 minutes until just tender.
  • Build the sauce – Return the blended corn mixture and remaining corn to the skillet along with the lemon zest and juice.
  • Add the pasta – Toss the cooked pasta into the skillet with about ½ cup of the reserved pasta cooking water to help loosen the sauce.
  • Finish the pasta – Stir in the parmesan cheese and season with kosher salt and freshly ground black pepper to taste.
  • Serve – Top the sweet corn pasta with the crispy bacon pieces and fresh herbs. Finish with extra parmesan and enjoy.
