Instructions
Cook the bacon
– Render the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside for topping later.
Sauté the shallots
– Add the shallot to the bacon fat and cook for a few minutes until softened.
Cook the corn and garlic
– Stir in the corn and garlic and cook for 4–5 minutes. Remove the corn mixture from the skillet and set aside.
Blend the corn sauce
– Add half of the corn to a blender along with the cream cheese. Blend until smooth to create a naturally creamy sauce.
Cook the zucchini
– Add the diced zucchini to the skillet and cook for about 4–5 minutes until just tender.
Build the sauce
– Return the blended corn mixture and remaining corn to the skillet along with the lemon zest and juice.
Add the pasta
– Toss the cooked pasta into the skillet with about ½ cup of the reserved pasta cooking water to help loosen the sauce.
Finish the pasta
– Stir in the parmesan cheese and season with kosher salt and freshly ground black pepper to taste.
Serve
– Top the sweet corn pasta with the crispy bacon pieces and fresh herbs. Finish with extra parmesan and enjoy.
