I keep a jar of this golden sauce in my fridge all summer long because it’s good on just about everything — pulled pork, grilled chicken, ribs, even sandwiches. It’s one of those easy, pantry-staple recipes that takes five minutes to whisk together and instantly makes dinner taste like you planned ahead!
A Quick History Lesson
The tangy, golden-hued sauce you’re using is more than just a tasty condiment — it’s a piece of South Carolina barbecue history. In the mid-1700s, German immigrants were recruited by the colony of South Carolina and settled there. These settlers brought with them a tradition of cooking smoked meats and a taste for mustard.
Over time, this mustard love fused with the local pork-barbecue culture to create a distinctly regional sauce style: yellow mustard as the base, mixed with vinegar, sugar, spices and sometimes a bit of heat. No tomato needed for this tasty sauce!
The popularity of this traditional South Carolina BBQ sauce became so popular over the years that this part of the country is known as the "Mustard Belt".

Carolina Gold Ingredients
Yellow Mustard - For the golden-yellow base. It thickens the yellow mustard bbq sauce and gives it it's tangy base.
Apple Cider Vinegar - Gives the mustard-base sauce its tang. I like it because it's not quite as sharp as plain white vinegar.
Maple Syrup - For flavor and hints of vanilla and caramel and for additional sweetness.
Brown Sugar - Added sweetness and more caramel flavor.
Worcestershire Sauce - Adds a savory factor and a bit of umami - this helps ba
All-Purpose Seasoning - I use my recipe. With the smoked paprika and savory dill, it's phenomenal in this mustard BBQ sauce recipe. If you use another kind, be mindful of the salt content.
Variations and Substitutions
Make it spicy. Add a bit of cayenne or red chili flakes. Hot sauce like Crystal's, Cholula, or even Tabasco would be great!
Make it sweeter. Increase the amount of maple and/or brown sugar if you like a sweeter sauce. You can even use honey!
Make it smokey. For a deeper smoke flavor, add a little liquid smoke, smoked paprika, or even finish the sauce over a low wood fire for a few minutes. This works especially well if you are using it as a glaze on ribs.
Experiment with the mustard. Add in a bit of dijon, whole grain mustard, and even a bit of honey mustard.
Tips and Tricks
If you like a thinner sauce for basting or drizzle, increase vinegar or add a little water; for a thicker dip-style consistency, reduce the vinegar or simmer a few extra minutes until it reduces slightly.
If using it as a glaze, apply the Carolina mustard BBQ sauce toward the end of cooking so the sugars don’t burn.


Carolina Mustard BBQ Sauce Recipe
Ingredients
- 1 cup yellow mustard
- ¼ cup apple cider vinegar
- ¼ cup maple syrup
- 2 tablespoon ketchup
- 2 tablespoon brown sugar
- 1 tablespoon all purpose seasoning
- 1 tablespoon worcestershire sauce
- salt and pepper, to taste
Instructions
- Add all of the ingredients except the salt and pepper to a small saucepan. Mix to combine.
- Brin the sauce to a simmer just for a few minute to combine flavors and dissolve the sugar. You don't have to cook it long at all.
- Remove from heat and cool. Season with salt and pepper as needed.
- Enjoy on chicken, pork, or ribs!

This mustard based BBQ sauce is good on so many things. Here's some ideas!
With pork shoulder/pulled pork: The fat in the meat stands up well to tang and vinegar — this is a classic combo and so very delicious.
With ribs or brisket: For richer meats like these, you might bump up the sugar just a tad and add more smokiness or heat so the sauce stands out more.
With chicken: Since chicken is a leaner protein, you can reduce the amount of vinegar slightly and add a little extra maple or mustard to preserve moisture.

Yes! And, you should! I highly suggest making this sauce at least a day before serving. The flavors get better over time!
Storage Instructions
Although we have never had this sauce last that long around here, it will stay good in a sealed container in the fridge for up to 1 month. I would be very surprised if you had any leftovers to store.
