how to make a chicken gyro bowl
Making a Chicken Gyro Bowl is basically a bit of assembly. Little actual cooking is required and that’s exactly what I want in my bowl recipes. Let’s proceed so we can eat!
the tzatziki
If you have never tried tzatziki, then pull up and chair and let’s talk. In a word, it’s amazing. It’s creamy and tangy and I add some fresh dill and chives for that lovely herby hit. I would almost say it’s like the Greek version of ranch dip.
Tzatziki is wonderful on so many things. It’s the perfect dressing for our Chicken Gyro Bowls, it’s great as a dip with fresh veggies, as a salad dressing, or even tossed with a little cooked orzo. You’ve got to try it if you haven’t already.
To make tzatziki, all you have to do is mix everything together. It’s a little Greek yogurt, some grated cucumber, fresh dill, lemon juice, and salt and pepper. I like to make this my first step of these gyro bowls so that the flavors have time to get nicey-nice.
the rice
The rice portion of this recipe is totally up to you. You can make rice the traditional way (I have a simple method in the recipe below), boiled rice in a bag, or the rice that you just heat up in the microwave. Use what you have and what you love. I’ll also have several different substitutions in the FAQ section below.
the chicken
It is no secret I am a huge fan of a rotisserie chicken. When buying a chicken, the less processed you can get it, the better. I am a whole chicken girl from way back and for this recipe, a whole chicken that’s already cooked for me is my jam!
Grab that rotisserie chicken. Debone said chicken, shred the meat, and set it aside. I like to quality check the chicken during this process. My dog, Iggy, likes to help me quality check, too. It’s a family affair.
To make the chicken more Greek-inspired, I simply toss the shredded meat with a little bit of my Greek seasoning. The recipe is below and takes only a few minutes to make.
Another reason to buy whole chickens – for making bone broth later. Do this once and you’ll never go back to store bought. It’s too easy and too delicious not to. Save the bones of chicken and store them in zip top bag in the freezer until you’re ready to make your broth.
the veggies and assembly
The next part of our Chicken Gyro Bowls is arguably my favorite. This is that part where you can make it just the way you like. I like starting my bowl with a base of rice and arugula. Then, I pile on the chicken. Next, I add tomatoes, cucumber, olives, and pickled onions.
I love a healthy dollop of the tzatziki and because we used greek yogurt, it’s basically another scoop of protein. Go wild.
After the tzatziki goes on the Chicken Gyro Bowls, I love a good sprinkle of minced chives and dill. And, of course, more feta. You must. I require it.
recipe frequently asked questions
The word “gyro” basically means “to turn” in Greek – like a gyroscope. Pronounced “yee-roh”, and in reference to food, it refers to the turning of the vertical rotisserie in which a variety of means are slow roasted. In this case, a fun twist on a classic, delicious sandwich.
If you are feeling something other than rice, I’ve got lot’s a great ideas.
-Quinoa – a different whole grain approach with a protein kick
-Couscous – one of my favorite, fast cooking pastas on the planet
-Cauliflower rice – for a low-carb spin
-Orzo – a rice-shaped pasta that cooks quick and is wonderful
