This salad hits all the marks for me. It’s full of great, tangy flavor, it has a ton of crunchy things that I love, and it has a dressing that will knock your socks off. Not only all of those lovely things, but my Greek Chicken Salad is super easy to throw together. And, it’s good for you! Winner winner chicken salad dinner. Ok. I’m done.

- full fat greek yogurt
- mayonnaise
- feta cheese

I don’t have time for a tedious salad. I want a salad and I want it now. So, grab a rotisserie chicken and let’s go! Greek Chicken Salad awaits!

I use a rotisserie chicken often. They are delicious, simple, and I always save the bones for broth. While the chicken is still warm, remove the meat from the bones and set aside.

Next, it’s just a matter of mixing and chopping to finish our Greek salad. I like to make my salad dressing first so it has time to get nicey-nice. You know? All those wonderful, tangy flavors have time to get together and taste amazing. Just take the salad dressing ingredients and whisk them together. This will take you approximately 3 minutes. Quick and easy and delicious. Just the way we like it!

The Greek Chicken Salad needs a salad portion. Amiright? For me, I need a salad that has a variety of colors, textures, and flavors. It needs to be as pretty as it is tasty. You eat with your eyes first, after all!
Start with a base of lettuce greens. I used chopped romaine and a kale, spinach, baby chard. Then, simply chop cucumbers (I love, love, love the small Persian cucumbers), cherry tomatoes, avocado, red onion, and Kalamata olives.
Toss the salad ingredients together, add the chicken and dressing, a little extra feta and some fresh dill and you have one of the most amazing salads ever!

This Greek Chicken Salad recipe is absolutely gluten-free. There is no need to make any substitutions for that dietary requirement.
The lemon feta dressing, however, does contain dairy. Substitute the greek yogurt with your favorite non-dairy, unflavored yogurt. For the cheese, nutritional yeast would be a great option!
Absolutely! Just swap the fresh herbs for dried and reduce the amounts to 2 tablespoons each. Dried herbs can be a bit stronger than fresh.

Greek Chicken Salad with a Lemon Feta Dressing

Chicken
- 2-3 cups shredded chicken I used a rotisserie chicken
Dill Feta Dressing
- 1/2 cup full fat greek yogurt
- 1/2 cup mayonnaise
- 4-6 oz feta, crumbled
- 3 tbsp fresh chives, minced
- 3 tbsp fresh dill, minced
- 2 tsp dried oregano
- 1 clove garlic, finely grated
- juice of a lemon
- kosher salt and fresh ground pepper, to taste
Salad
- 6 cups mixed greens
- 4 Persian or snacking cucumbers, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ยผ cup red onion, thinly sliced
- ยผ cup kalamata olives
Instructions
Chicken
- Debone the rotisserie chicken and set meat aside.
Dill Feta Dressing
- Mix all dressing ingredients together. Refrigerate until ready to use.
Salad
- Toss salad ingredients to combine.
- To the salad, add the chicken and drizzle with the dill feta dressing. Add extra feta and garnishes to your heart's desire and enjoy!
