Preheat your air fryer to 400°. Place the potstickers on a baking sheet or a large plate. Evenly coat the potstickers with the avocado spray oil.
Add the wontons in a single layer with plenty of space between each one in the air fryer. Let them cook for about 12 minutes or until nice and crispy. See note below.
Sweet Chili Sauce
In a saucepan over medium-high heat, combine the water, rice vinegar, sugar, sambal oelek, garlic, ginger, ketchup, and tamari. Stir until the sugar dissolves and bring the mixture up to a simmer.
Add the cornstarch slurry and stir until combined. Remove from heat and let cool.
Yum Yum Sauce
Mix together the mayo, ketchup, sriracha, rice vinegar, smoked paprika, granulated garlic and onion, and rice vinegar.
Serving
Once the potstickers are nice and crispy, dunk in one or two of the sauces and enjoy!
Notes
The difference in air fryers and the difference in brand and size of your potsticker will affect the cook time. Start watching the potstickers around the 6 minute mark. I've seen them take anywhere from 8 minutes to 18 minutes to get nice and crispy.
If you like a sweeter sauce, add granulated sugar or honey to one or both of the above sauces. I would start with a teaspoon and go up from there depending on your taste.
