What You Need and Why
For the Air Fryer Potstickers
- Frozen potstickers — any brand or filling you love; veggie, chicken, pork, shrimp… all work beautifully.
- Avocado oil spray — helps the potstickers crisp up perfectly in the air fryer.
For the Sweet Chili Dipping Sauce
This one’s sweet, tangy, spicy, and way better than store-bought.
- Water — base for the sauce.
- Granulated sugar — for that classic sweet chili vibe.
- Rice vinegar — brightens and balances the sweetness.
- Sambal oelek or sriracha — pick your heat.
- Garlic — minced for punchy flavor.
- Ginger — warmth + depth.
- Tamari or soy sauce — adds saltiness and umami.
- Ketchup — gives color + body.
- Cornstarch slurry — thickens the sauce to that glossy finish.
For the Yum Yum Sauce
Creamy, tangy, slightly spicy — the dip kids AND adults go wild for.
- Mayonnaise — the rich, creamy base.
- Ketchup — classic Yum Yum sweetness + color.
- Rice vinegar — adds a little zip.
- Smoked paprika — smoky depth.
- Granulated garlic — for savory flavor.
- Granulated onion — rounds everything out.
- Sriracha — add a little or a lot, depending on your spice vibe.
- Tamari or soy sauce — a touch of umami.

Swaps and Flavor-Boosting Variations
Potstickers are a blank canvas. Here’s how to turn freezer food into dinner magic.
- Swap potstickers for egg rolls, gyoza, or spring rolls — the air fryer loves them all. Just add a minute or two depending on size.
- Use any filling you love — pork, chicken, veggie, shrimp, kimchi… if it’s in the freezer aisle, the air fryer will make it crispy.
- Try mini potstickers — dangerously poppable and perfect for kids or snack boards. Cut the cook time slightly (but not your portion size — trust me).
- Make it a meal bowl — serve the crispy potstickers over rice, cabbage slaw, sautéed veggies, or a quick sesame noodle situation.
- Go spicy — drizzle chili crisp, sriracha, sambal oelek, or a spicy mayo over the top before serving.
- Switch up the sauces — teriyaki, peanut sauce, sweet soy, gochujang mayo, spicy mustard, or even ranch (yes, the kids WILL try it).
- Give them a garlic butter finish — toss hot potstickers with melted butter + garlic + sesame seeds. It’s illegal how good this is.
- Sesame scallion upgrade — sprinkle sesame seeds + sliced green onions for a “fakeout takeout” moment.
- Make them crispy dumpling nachos — layer potstickers on a platter with Yum Yum sauce, green onions, sesame seeds, and a drizzle of spicy oil.
- Add protein + veggies — serve with rotisserie chicken, sautéed broccoli, snap peas, or stir-fried mushrooms for an actual dinner that took zero effort.
Tips & Tricks
- Don’t overcrowd the basket — potstickers need airflow or they’ll steam instead of crisp.
- Use avocado oil spray — gives an even, light coating for perfect browning.
- Shake or flip halfway through — ensures all sides get that golden, crispy texture.
- Start checking at 6 minutes — different air fryers and dumpling sizes vary (8–18 minutes is normal).
- Keep them frozen — thawed potstickers get mushy and tear; cook straight from the freezer.
- Listen for the sizzle — when they sound “dry,” they’re nearing crispy perfection.
- Add a teaspoon of water if you want softer tops — mimics pan-fried dumplings (crispy bottoms + tender tops).
- Serve immediately — they’re at peak crispiness the moment they leave the air fryer.

Air Fryer Potstickers Recipe
Ingredients
Sweet Chili Sauce
- ⅓ cup water
- ⅓ cup granulated sugar
- ⅓ cup rice vinegar
- 1 tablespoon sambal oelek or sriracha
- 1½ teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 teaspoon tamari or soy sauce
- 1 teaspoon ketchup
- 2 teaspoon cornstarch, dissolved in 1 tablespoon water
Yum Yum Sauce
- 1 cup mayonnaise
- 1 tablespoon ketchup
- 1 tbsp rice vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 teaspoon sriracha more or less depending on your spice preference
- 1 teaspoon tamari or soy sauce
Instructions
Crispy Wontons
- Preheat your air fryer to 400°. Place the potstickers on a baking sheet or a large plate. Evenly coat the potstickers with the avocado spray oil.
- Add the wontons in a single layer with plenty of space between each one in the air fryer. Let them cook for about 12 minutes or until nice and crispy. See note below.
Sweet Chili Sauce
- In a saucepan over medium-high heat, combine the water, rice vinegar, sugar, sambal oelek, garlic, ginger, ketchup, and tamari. Stir until the sugar dissolves and bring the mixture up to a simmer.
- Add the cornstarch slurry and stir until combined. Remove from heat and let cool.
Yum Yum Sauce
- Mix together the mayo, ketchup, sriracha, rice vinegar, smoked paprika, granulated garlic and onion, and rice vinegar.
Serving
- Once the potstickers are nice and crispy, dunk in one or two of the sauces and enjoy!
Notes
- The difference in air fryers and the difference in brand and size of your potsticker will affect the cook time. Start watching the potstickers around the 6 minute mark. I've seen them take anywhere from 8 minutes to 18 minutes to get nice and crispy.
- If you like a sweeter sauce, add granulated sugar or honey to one or both of the above sauces. I would start with a teaspoon and go up from there depending on your taste.

Serving Ideas
- Make it a 20-minute dinner — serve over rice with steamed broccoli or a quick cabbage slaw.
- Build a potsticker platter — pile them high with both sauces, sliced green onions, sesame seeds, and chili crisp.
- Serve as a game-day snack — big bowl of potstickers + cold drinks + happy people.
- Turn them into an appetizer board — add edamame, cucumbers, kimchi, sliced mango, and crispy wonton chips.
- Pack for an after-school snack — kids LOVE these dipped in Yum Yum sauce.
- Serve with a noodle bowl — sesame noodles, peanut noodles, or ramen pair beautifully.
- Upgrade your soup night — float a few in miso soup or broth-based soups for a cozy shortcut meal.
- Use as a party finger food — toothpicks + dipping sauces = instant crowd-pleaser.
Storage & Reheating
- Store leftovers in the fridge for up to 3 days — keep them in an airtight container to prevent drying out.
- Reheat in the air fryer at 375° for 3–5 minutes — restores the crispiness better than any other method.
- Reheat in a skillet with a splash of oil — great for getting the bottoms extra crunchy again.
- Avoid the microwave if possible — it makes the potstickers soft and chewy instead of crisp.
- Sauces store beautifully — both the Sweet Chili and Yum Yum sauces keep in the fridge for 5–7 days.
- Do not freeze after cooking — cooked potstickers lose their texture and become soggy when thawed.
You Asked, I Answered
Should I thaw the potstickers before air frying?
No — cook them straight from frozen. Thawing makes the wrappers gummy and prevents them from crisping properly.
How long do potstickers take in the air fryer?
Every air fryer and brand of dumpling cooks differently, but here’s the sweet spot:
Full-size potstickers: usually 10–14 minutes
Mini potstickers: usually 6–10 minutes
Start checking around 6 minutes, then cook until deeply golden and crisp (sometimes up to 18 minutes depending on size + brand).
Where can I buy potstickers?
Just about everywhere now — grocery stores, Target, Costco, Walmart, and Trader Joe’s all carry great options. For the best variety, check your local Asian market. They often have the widest selection of fillings, shapes, and brands.
Can I make these without an air fryer?
Yes! Pan-fry them in a little oil, then add a splash of water and cover to steam. Or bake at 400° until crisp. (Air fryer is still the fastest + crispiest.)
Are these potstickers kid-friendly?
Absolutely — especially with the creamy Yum Yum sauce. Kids LOVE these.
