Bring a large pot of generously salted water to a boil — this is how the noodles get flavor from the start. Add your pasta of choice and cook according to the package directions until just al dente.
The Sauce
When the pasta is almost done, melt the butter in a large skillet over low heat. Add the drained pasta and toss well to coat.
Stir in a splash of pasta water, the Parmesan, black pepper, continuing to toss until the noodles turn silky and evenly coated.
Finish with optional lemon. Add a little more pasta water if needed, taste for salt, and serve warm.
