Buttered Noodles Recipe

Ingredients

  • ½ lb pasta of choice I used spaghetti
  • ¼ cup butter, cubed
  • ¼ cup pasta water
  • ¼ cup parmesan cheese, grated
  • ½ teaspoon fresh ground pepper
  • kosher salt, to taste
  • juice and zest of ½ to 1 lemon, to taste optional

Instructions

The Pasta

  • Bring a large pot of generously salted water to a boil — this is how the noodles get flavor from the start. Add your pasta of choice and cook according to the package directions until just al dente.

The Sauce

  • When the pasta is almost done, melt the butter in a large skillet over low heat. Add the drained pasta and toss well to coat.
  • Stir in a splash of pasta water, the Parmesan, black pepper, continuing to toss until the noodles turn silky and evenly coated.
  • Finish with optional lemon. Add a little more pasta water if needed, taste for salt, and serve warm.
  • Enjoy!

Notes

Keep a little extra pasta water nearby until everything is fully combined. Different pasta shapes, extra cheese, or a little more butter can all change how much you need for a silky finish.
