Some nights just call for something stupid easy — and these Easy Buttered Noodles are exactly that. Just 4 ingredients, no cream, nothing fancy, and absolutely zero thinking required. They’re buttery, cozy, universally loved, and the kind of side dish kids inhale and adults secretly get excited about. Whether you’re serving busy-weeknight chicken, a quick skillet dinner, or just trying to keep the peace at the dinner table, these noodles show up every single time.
And honestly? That’s the magic here — a side dish that tastes like comfort, takes almost no effort, and somehow goes with absolutely everything. Here's why:
- Only 4 ingredients — simple, budget-friendly, weeknight gold.
- Ready in 20 minutes — because dinner should not be a production.
- Kid-friendly and universally loved — zero complaints, ever.
- No cream required — just butter, pasta, and a little seasoning magic.
- Pairs with everything — chicken, steak, salmon, or whatever’s in your fridge.
What You'll Need and Why
- Pasta – Any shape works — egg noodles, spaghetti, fettuccine, mini shells. Use what you love; this recipe plays well with everything.
- Butter – Salted or unsalted both work. This is the heart of the dish, so use the good stuff if you’ve got it.
- Parmesan – Freshly grated gives you the silkiest finish, but the pre-grated shaker stuff works in real-life kitchens too.
- Pasta Water – Liquid gold. A splash loosens the sauce and helps the butter + parmesan cling to every noodle.
- Kosher Salt - Salt your pasta water generously — this is how the noodles get flavor. If your water isn’t salty like the sea, your noodles won’t taste like anything.
- Black Pepper (optional) – Add a few cracks for a tiny kick if you love a little bite at the end.

Swaps and Flavor-Boosting Variations
- Noodles – Use any noodle your heart (or your kids) desires. Egg noodles, spaghetti, shells, bowties — they all work. Just keep an eye on cooking times since shapes vary.
- Cheese – Parmesan is my go-to for its salty, nutty magic. Use freshly grated if you can. And as always: the green-lid shaker is not cheese. We don’t do that here.
- Herbs – This recipe is a blank canvas. Parsley, chives, basil, thyme — toss in whatever fresh herbs you love to give the dish a little personality.
- Lemon – A squeeze of lemon juice and a hit of zest instantly brightens the whole bowl. Especially good if you love a lighter, fresher vibe.
- Boursin – Stir a spoonful in at the end and watch the noodles turn creamy, dreamy, and borderline addictive. You can thank me later.
- Breadcrumbs – Toast some panko in butter and sprinkle over the top for crunch. It’s simple, it’s golden, it’s ridiculous — in the best way.

Tips & Tricks: From a Noodle Expert
- Salt the pasta water like you mean it — the water should be salty; this is how the noodles get actual flavor.
- Use high-quality butter — with so few ingredients, the butter does all the heavy lifting, so use the good stuff.
- Kosher salt is your friend — it enhances flavor and brings out the richness of the butter; simple recipes rely on proper seasoning.
- Freshly ground black pepper only — the pre-ground stuff tastes like nothing; a few turns of the grinder make a huge difference.
- Parmesan: get the real deal — a wedge of real Parm lasts forever and melts beautifully; the green can is not invited.
- Cook the pasta just to al dente — overcooked noodles fall apart; pull them when they still have a little bite.
- Do not rinse the pasta — rinsing washes away the starch that helps butter and Parmesan cling to every noodle.
- Save your pasta water — a splash creates that glossy, silky finish that makes these noodles taste restaurant-level.

Buttered Noodles Recipe
Ingredients
- ½ lb pasta of choice I used spaghetti
- ¼ cup butter, cubed
- ¼ cup pasta water
- ¼ cup parmesan cheese, grated
- ½ teaspoon fresh ground pepper
- kosher salt, to taste
Instructions
The Pasta
- To begin, grab that stockpot, fill it with water, and heavily salt it. The water needs to be SALTY. Maybe not quite like the ocean, but enough to know you have some good salinity in that water. This is the only way to get flavor into the noodle itself.
- Bring the salted water to a boil.
- Once the water comes to a boil, carefully add your pasta of choice and cook it according to the package instructions.
The Sauce
- When the pasta is almost finished cooking, add the butter to a large skillet on low heat. Let that melt. Have the parmesan cheese, kosher salt, and fresh ground pepper at the ready and close by.
- Add the strained pasta to the large skillet.
- Vigorously stir the pasta in with the butter. Add the pasta water along with the grated parmesan cheese and fresh ground pepper. Keep stirring. If you think you need a little more water, add it. This will only help the sauce to become more silky and it will absorb into the noodles.
- Taste for salt and if you think it needs a little more, add some.
- Enjoy!

Make It a Meal
- Grilled or Baked Chicken — The perfect easy pairing. Chicken thighs, cutlets, rotisserie… anything goes.
- Meatballs — Classic Italian, Swedish, or even BBQ meatballs turn this into a full, comforting dinner.
- Pan-Seared Salmon — Buttery noodles + flaky salmon = a shockingly good combo.
- Sautéed Shrimp — Quick, garlicky shrimp tossed over these noodles feels fancy but takes no time.
- Vegetable Sides — Broccoli, green beans, roasted carrots, or a simple salad balance the richness.
- Add a Veggie to the Bowl — Peas, spinach, or steamed broccoli can be tossed right in for an easy upgrade.
- Serve It Solo — Honestly? These noodles can absolutely be dinner when life is lifing.
Storage & Reheating Instructions
Store:
Leftover Buttered Noodles will keep in an airtight container in the fridge for up to 3 days — though let’s be honest, they rarely last that long.
Do Not Freeze:
Pasta and freezing are not friends. The noodles turn mushy and fall apart after thawing, and the butter separates. Make this recipe fresh and enjoy immediately for the best texture.
Reheat:
Warm gently in a skillet over low heat to keep the butter from separating. Add a splash of water to loosen things up if the noodles seem dry. This method keeps everything silky instead of oily.

You Asked, I Answered
What kind of pasta is best for Buttered Noodles?
Whatever pasta you love! I use what my children request. Sometimes it's a egg noodles, today it's spaghetti. It all works great.
TIP FOR PARENTS: Make sure to ask your kids what kind of noodle situation they want. If you don't and you use spaghetti, they'll claim they don't like spaghetti noodles anymore and they wouldn't dream of eating it. This is your life now.
Can I make this with GF pasta?
Absolutely! Use whatever GF pasta you have on hand or your favorite!
Should I rinse the noodles after cooking?
No! The starches on the noodles help thicken the sauce. If you rinse them off, the sauce will be runny. Likewise, don't discard the pasta cooking water. It's liquid gold for this recipe
