Ingredients

Chicken

  • 2-3 cups shredded chicken I used a rotisserie chicken

Dill Feta Dressing

Salad

  • 6 cups mixed greens
  • 4 Persian or snacking cucumbers diced
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • ¼ cup red onion thinly sliced
  • ¼ cup kalamata olives rough chopped

Instructions

Dill Feta Dressing

  • Whisk all dressing ingredients together until smooth and well combined. Refrigerate until ready to use to let the flavors meld.

Salad

  • Add all salad ingredients to a large bowl and toss gently to combine.
  • Top the salad with the chicken, then drizzle with the dill feta dressing. Finish with extra feta and any desired garnishes. Toss lightly and serve immediately.
