A Word About What You'll Need
I am team rotisserie chicken. Chicken roasted whole on a bone will be the best tasting version of chicken you can get. I will die on that hill and you can't kick me off. This is what I use for salads like this. They're easy and affordable and tasty and I save the bones for bone broth. It's a win-win in my opinion, but you can use whatever chicken situation you like.
You'll need some greek yogurt and mayo for the creamy component of the dressing. You'll also need some good feta. This dressing is almost like a tzatziki and it's absolutely delicious, so use the best quality ingredients you can find.
I love, love using fresh herbs in this Greek Chicken Salad. The fresh dill and chives are just chef's kiss. You can taste the difference here.
The greens parts of the salad is up to you. I like a mixed green situation along with my favorite Persian cucumbers, cherry tomatoes, red onion and avocado.
Kalamata olives scream classic Greek and Mediterranean flavor to me. That salty punch brings this entire salad together.

Speak Softly and Carry A Sharp Knife
There isn't much to making this Greek Chicken Salad recipe. You'll shred your chicken and chop your veggies. The lemon feta dressing just needs a quick whisk. There just isn't much to do here, so I won't go on and on about why my third cousin twice removed liked chocolate chip cookies. You know what I'm saying?
However, I will always tell you to make sure you have a sharp knife. It seems a ludicrous reminder, but for real. A dull knife is one of the quickest ways to the emergency room.
Anytime you're about to embark on a big salad recipe, take the time to sharpen that knife. I want you to keep alllll those digits in place!

Let's get back to making our food look nice. Take the extra 2-3 minutes to arrange it. I consider this a part of my self care. Do it a few times and you'll see just what I mean.

The lemon feta dressing, however, does contain dairy. Substitute the greek yogurt with your favorite non-dairy, unflavored yogurt. For the cheese, a little nutritional yeast would be a great option!
