Ingredients
Salmon

salmon filets

tablespoon
olive oil
kosher salt and pepper, to taste
Dill Feta Dressing
½
cup
full fat greek yogurt
½
cup
mayonnaise

oz
feta, crumbled
1
lemon, juiced
3
tablespoon
fresh chives, minced
3
tablespoon
fresh dill, minced
2
tsp
dried oregano
1
clove
garlic, finely grated
Salad
6
cups
mixed greens

Persian or snacking cucumbers, diced

cup
cherry tomatoes

cup
red onion, thinly sliced

kalamata olives
Instructions
Salmon
Drizzle the salmon with olive oil and season with salt and pepper. Roast in a preheated 300°F oven for 20–25 minutes, until flaky and buttery-soft.
Dill Feta Dressing
Mix all of the dressing ingredients together until smooth. Set aside or refrigerate until ready to use.
Salad
Add the salad ingredients to a large bowl and toss to combine.
Top with the salmon, drizzle with the dill feta dressing, and finish with extra feta and garnishes if desired.
