Greek Salmon Salad Recipe

This Greek salmon salad is hearty and satisfying, made with buttery salmon, fresh greens, and a creamy dill feta dressing that works for lunch or dinner.

Ingredients

Salmon

  • 1 lb salmon filets
  • 1 tablespoon olive oil
  • kosher salt and pepper, to taste

Dill Feta Dressing

  • ½ cup full fat greek yogurt
  • ½ cup mayonnaise
  • 4 oz feta, crumbled
  • 1 lemon, juiced
  • 3 tablespoon fresh chives, minced
  • 3 tablespoon fresh dill, minced
  • 2 tsp dried oregano
  • 1 clove garlic, finely grated

Salad

  • 6 cups mixed greens
  • 2 Persian or snacking cucumbers, diced
  • 1 cup cherry tomatoes
  • ¼ cup red onion, thinly sliced
  • ¼ cup kalamata olives

Instructions

Salmon

  • Drizzle the salmon with olive oil and season with salt and pepper. Roast in a preheated 300°F oven for 20–25 minutes, until flaky and buttery-soft.

Dill Feta Dressing

  • Mix all of the dressing ingredients together until smooth. Set aside or refrigerate until ready to use.

Salad

  • Add the salad ingredients to a large bowl and toss to combine.
  • Top with the salmon, drizzle with the dill feta dressing, and finish with extra feta and garnishes if desired.
