Ingredients

  • cup Kodiak Protein Pancake Mix or pancake mix of choice
  • 4 eggs
  • ½ cup plain Greek Yogurt
  • ½ teaspoon kosher salt
  • 2 tablespoon maple syrup
  • 8 precooked breakfast sausage patties
  • butter or spray oil for cooking the pancakes

Instructions

  • Whisk together pancake mix, eggs, Greek yogurt, salt, and maple syrup until smooth. The batter will be very thick and should easily coat the back of a spoon.

  • Heat a skillet over medium heat and coat with butter. Dip each sausage patty into the batter. Make sure the patty is coated on all sides.

  • Place in skillet and cook 2-3 minutes per side until golden brown.

  • Serve with extra maple syrup and enjoy!
