- Keep the batter thick: It should easily coat the back of a spoon. If it's too thin, it will slide right off the sausage. Just add a little more pancake mix if you need to.
- Cook over medium heat: Too hot and the outside browns before the center cooks. Medium heat gives the batter time to puff and cook through.

Instructions
- Whisk together pancake mix, eggs, Greek yogurt, salt, and maple syrup until smooth. The batter will be very thick and should easily coat the back of a spoon.

- Heat a skillet over medium heat and coat with butter. Dip each sausage patty into the batter. Make sure the patty is coated on all sides.

- Place in skillet and cook 2-3 minutes per side until golden brown.

- Serve with extra maple syrup and enjoy!

- Sausage links vs. patties: Patties are much easier to coat evenly and cook more consistently. If you use links, make sure they're fully cooked before dipping them in the batter.
- Homemade vs. boxed pancake mix: Both work beautifully. Just make sure the batter is thick enough to cling to the sausage instead of sliding off.
- Batter too thin? Whisk in a little more pancake mix until it coats the back of a spoon.
- Browning too quickly? Turn the heat down to medium-low. The pancake needs time to cook through before the outside gets too dark.
