Load the slow cooker: Place the steak bites, onion, garlic, fresh thyme, and fresh oregano into the slow cooker. Season with kosher salt and black pepper.≈
Mix the cooking liquid: Whisk together the beef broth, Worcestershire sauce, tomato paste, and mushroom powder until combined. Pour over the beef.
Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3-4 or until the beef is fall-apart tender.
Finish and serve: Remove the herb stems. Taste and adjust salt and pepper as needed. Serve the steak bites and sauce over mashed potatoes, creamy polenta, or egg noodles.
Notes
For a thicker gravy: Start with 2 tablespoons cornstarch mixed with 2 tablespoons cold water. If you'd like it thicker, you can always add more slurry until the sauce reaches your preferred consistency.
