- 1 med yellow onion sliced
- 5-6 cloves garlic minced
- 1 tablespoon tomato paste
- 1 tablespoon mushroom powder
- 1 tablespoon Worcestershire
- 1½ cups beef broth
- 4-5 sprigs fresh thyme or 1 teaspoon dried
- 2-3 sprigs fresh oregano or ½ teaspoon dried
- kosher salt and fresh ground pepper to taste
- 2 tablespoons cornstarch + 2 tablespoons cold water, optional, for thickening
Instructions
- Load the slow cooker: Place the steak bites, onion, garlic, fresh thyme, and fresh oregano into the slow cooker. Season with kosher salt and black pepper.≈

Recipe Testing Notes & Troubleshooting
A few things I learned while testing these Slow Cooker Steak Bites that will help you get the best results at home.
- Round steak: I developed this recipe using round steak because it becomes incredibly tender with low-and-slow cooking without requiring a more expensive cut of beef. Because round is fairly lean, you can also use a fattier cut if you prefer. Chuck roast, sirloin, or even stew meat will all work well.
- Try a whole chuck roast: This same recipe works beautifully with a whole chuck roast. Skip cutting it into steak bites, nestle the roast into the cooking liquid, and cook it low and slow until fall-apart tender.
- No searing needed: I tested this as a true dump-and-go recipe. You can sear the beef first, but for three pounds of steak bites, I don't think the extra work is necessary.
- Sauce or gravy: I make these steak bites both ways. Sometimes I leave the sauce thin and spoon it over mashed potatoes or noodles, and sometimes I thicken it into more of a gravy. If you want it thicker, start with a slurry of 2 tablespoons cornstarch and 2 tablespoons cold water, then add more only if needed.
