Why Make Green Goddess Salad
This salad really is one of my favorites. It’s got everything I require – a phenomenal dressing, a great protein source, plenty of crunch, and something tangy. Not only are the flavors great, but it’s so very simple to put together.
My green goddess salad is also a perfect meal prep salad. Make this at the beginning of the week and have it for lunch or dinner for the next several days.
Green Goddess Salad Ingredients
- Cashews
- Avocado Oil
- Green Onion
- Rice Vinegar
- Parmesan Cheese
- Lemon
- Kosher Salt
- Black Pepper
- Shrimp
- Red Onion
- Apple Cider Vinegar
- Water
- Sweetener of choice – monk fruit, maple syrup, honey, etc.
- Salad Ingredients – Iceberg, Radicchio, Spinach Leaves, Cucumbers, Sweet Peppers, Tomatoes, Avocado

Time needed: 35 minutes
To make the best Green Goddess Salad ever, simply:
- GREEN GODDESS DRESSING
Add all dressing ingredients to a blender. Pulse until smooth. Store in the refrigerator until ready to use.
If you like the dressing a little thinner, you can add a few tablespoons of water. - LEMON SHRIMP
For the protein portion of our Green Goddess Salad, we will need some shrimp. Bring a large pot of water to a boil with lemons. Salt liberally. Add shrimp. Boil until shrimp is just cooked through. Remove from water and place into ice bath. Peel when cooled. Set aside.ย
- PICKLED ONIONS
Place sliced onion into a glass jar. Fill jar halfway with vinegar. Fill remainder of jar with water. Add peppercorns and sweetener, if so desired.ย Let this marinate for at least 20 minutes before using.
- ASSEMBLY
Toss salad ingredients together. Add shrimp and pickled onions. Toss with dressing. Season with salt and pepper as needed.
- Enjoy!

Green Goddess Salad Recipe with Avocado and Pickled Onions
Ingredients
Dressing
- 1/4 cup cashews
- 1/3 cup avocado oil
- 2 bunches green onion, cut into halves
- 2 tbsp rice vinegar
- 1/2 cup parmesan cheese, grated
- juice of 2 lemons
- kosher salt and pepper, to taste
Lemony Shrimp
- 2 lbs shrimp, tail on and deveined
- 2 lemons, halved
- kosher salt
Pickled Onions
- 1 red onion, thinly sliced
- apple cider vinegar
- water
- 1 tbsp black peppercorns
- maple syrup or honey, optional
Salad
- 1 head iceberg, chopped
- 1 head radicchio, chopped
- 2-3 cups fresh spinach leaves
- 3-4 snacking cucumbers, diced
- 5-6 small sweet peppers, diced
- 1 pint mixed tomatoes, diced
- 2-3 avocados, sliced
- kosher salt and fresh ground pepper, to taste
Instructions
