One of my favorite parts about this cookie is the dough. The cream cheese and corn syrup make these strawberries and cream cookies so tender it almost boggles the mind. The white chocolate chips makes the "cream" in strawberries and cream and I cannot get enough. They have the wonderful strawberry flavor, but aren't too sweet. They are just perfect. I said it.

These cookies are also great to keep around for an afternoon sweet treat, but pretty enough to serve at a baby or wedding shower. I cannot even say how many times I have had them for breakfast with my morning coffee. My strawberries and cream cookies are also a wonderful end to meal when you need just a little something something to end the day. However and whenever, just make them. Your people will thank you.

  • Cream Cheese
  • Granulated Sugar
  • Corn Syrup
  • Eggs
  • Vanilla Extract
  • All Purpose Flour
  • Baking Soda
  • Kosher Salt
  • Freeze-Dried Strawberries
  • White Chocolate Chips

how to make strawberries and cream cookies

To begin our strawberries and cream cookies, make sure you set out the butter, cream cheese, and eggs a couple of hours before baking. These need to be room temperature. The cream cheese, especially, will mix better. If it mixes better, it will bake better, and the cookie will be happy. If the cookie is happy, you'll be happy. And, that's exactly what we want!

Cream the butter, cream cheese, sugar, and corn syrup together until fluffy. Add the eggs, one at a time, mixing thoroughly after each addition. Don't forget the vanilla. In a separate bowl, mix the dry ingredients together because technically that's what you're supposed to do. And, it does make a difference. So, do that.

Mix in the dry ingredients until just blended. Fold in the white chocolate chips and freeze-dried strawberries. Using a tablespoon cookie scoop, portion out the dough onto a parchment lined cookie sheet.  Bake for 10-12 minutes, just until the edges are barely golden brown. Don't over bake them. They will look just barely cooked and that's what we want!

Remove from the oven and let them cool. Try one and attempt to not eat the entire batch of these strawberries and cream cookies!

frequently asked questions

Can I use fresh strawberries?

Using fresh strawberries in this recipe will throw off the moisture ratios, so I don't recommend it. The freeze-dried strawberries work much better for these strawberries and cream cookies.

Do I have to use white chocolate chips?

You do not! In fact, either milk chocolate or semi-sweet chocolate chips would be amazing here!

Instructions

  • Preheat oven to 350°. 
  • Whip butter, cream cheese, sugar, and corn syrup together until fluffy.
  • Add one egg at a time along with the vanilla extract, mixing thoroughly.
  • Add flour, baking soda, and salt until just combined. Fold in white chocolate chips and dehydrated strawberries.
  • Using a tablespoon cookie scoop, portion out onto a parchment lined cookie sheet.  Bake 10-12 minutes, just until the edges are barely golden brown.
  • Remove from the oven and let cool. Enjoy!
