Pork Tenderloin Sandwich

  • 4 ciabatta rolls, sliced in half
  • 8 slices crisp, cooked bacon
  • 4 slices provolone cheese
  • 1 avocado, thinly sliced
  • ¼ red onion, thinly sliced
  • 2-3 cups mixed salad greens

Instructions

Pork Tenderloin

  • Spread yellow mustard over the pork tenderloin. Next, coat the pork with all-purpose seasoning.
  • Roast pork in a preheated 425° oven for 30 minutes or until the internal temperature reaches 145°. Once, fully cooked, remove from the oven and let it rest.
  • After the pork has cooled, thinly slice it.

Sandwich Spread

  • While the pork roasts in the oven, mix all of the sandwich spread ingredients together and set aside.

Build The Sandwich

  • Spread copious amount of the sauce over the ciabatta rolls. Layer the avocado slices, onion, bacon, pork tenderloin and cheese on the bottom piece of bread. Top with a handful of your favorite greens. Add the top piece of the bread.
  • Serve and enjoy with extra spread on the side!
