Pull Up A Chair & Let's Chat!

Forget the mountain of prep and specialty ingredients. This Roasted Pork Tenderloin Sandwich is my go-to for a high-quality meal without the long evening in the kitchen. We’re pairing a lean, mustard-crusted tenderloin with a zesty lemon chive spread for a sandwich that's hearty, fresh, and surprisingly light. It’s the perfect "real kitchen" upgrade for a busy Tuesday.

Why It Works

  • The Protein Choice: Pork tenderloin is lean, tender, and roasts incredibly fast, giving you a huge flavor payoff with minimal effort.
  • The "Secret Sauce" Spread: The lemon chive spread isn't just mayo—it’s a bright, savory condiment that balances the richness of the pork and bacon perfectly.
  • Structural Integrity: Using ciabatta rolls ensures the bread can hold the juices from the pork and the creaminess of the avocado without falling apart.
  • Balanced Flavors: Between the smoky bacon, the sharp red onion, and the fresh greens, every bite has a mix of salty, zesty, and crisp textures.
  • Flexible Serving: Since the pork is just as good chilled as it is warm, this works perfectly for a freshly made dinner or a prepped lunch for the next day.

What You'll Need & Why

Roasted Pork Tenderloin

  • Pork tenderloin: Lean, tender, and perfect for roasting.
  • Mustard: Acts as a binder for the seasoning and boosts flavor.
  • All-purpose seasoning: Simple and effective for the pork.

Lemon Chive Sandwich Spread

  • Mayonnaise: Creamy base for the spread.
  • Lemon: Brightens everything up.
  • Fresh chives: Mild onion flavor and freshness.
  • Garlic: Adds depth.
  • Anchovy paste: Brings subtle umami without tasting fishy.
  • Worcestershire sauce: Rounds out the flavor with savory richness.

Sandwich Assembly

  • Ciabatta rolls: Sturdy with great nooks and crannies for soaking up the spread.
  • Bacon: Salty, smoky, and always a good idea.
  • Avocado: Creamy and balances the pork beautifully.
  • Provolone cheese: Mild, melty, and perfect here (use what you love).
  • Mixed greens: Adds freshness and crunch.
  • Red onion: A little bite and savoriness.

Swaps & Flavor-Boosting Variations

Make this roasted pork tenderloin sandwich your own with these easy options.

  • The Protein: Swap tenderloin for pork loin or boneless chops—just adjust roasting time until it hits 145°F.
  • The Bread: Ciabatta is king for structure, but toasted sourdough or a soft brioche bun works beautifully.
  • The Sauce: Swap the lemon chive for garlic aioli, pesto mayo, or a spicy chipotle spread.
  • The Cheese: Provolone is classic, but Swiss, fontina, or a sharp white cheddar melt perfectly.
  • The Greens: Use baby spinach for a mild bite, arugula for pepperiness, or romaine for extra crunch.
  • The "Pop": Add thin apple slices for sweetness, pickled jalapeños for heat, or roasted red peppers for a smoky finish.
  • The "Lazy" Route: This recipe is the ultimate way to use up leftover pork roast. Just slice it cold and hit it with the lemon chive spread.

Tips & Tricks

A few small details make this pork tenderloin sandwich even better.

  • The 30-Minute Rule: Take the pork out of the fridge 30 minutes before roasting. Room-temp meat cooks more evenly, preventing "dry ends."
  • Carryover Cooking: Pull the pork at 140°F. It will continue to rise to the safe 145°F mark as it rests.
  • The 10-Minute Rest: Never slice immediately. Letting the meat rest for 10 minutes keeps the juices inside the pork instead of on your cutting board.
  • The Moisture Barrier: Spread the lemon chive sauce on both halves of the roll. This seals the bread and prevents it from getting soggy.

Ingredients

Lemon Chive Spread

  • ½ mayonnaise
  • ½ lemon, juice and zest
  • 3-4 tablespoon chives, minced
  • 1 clove garlic, grated
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon anchovy paste
  • 1 teaspoon dijon mustard
  • kosher salt and fresh ground pepper, to taste

Pork Tenderloin

  • 1 1 lb pork tenderloin
  • yellow mustard enough to coat the tenderloin
  • 2 tablespoon all-purpose seasoning

Pork Tenderloin Sandwich

  • 4 ciabatta rolls, sliced in half
  • 8 slices crisp, cooked bacon
  • 4 slices provolone cheese
  • 1 avocado, thinly sliced
  • ¼ red onion, thinly sliced
  • 2-3 cups mixed salad greens

Instructions

Roast the Pork Tenderloin

  • Spread the pork tenderloin evenly with mustard, then coat with all-purpose seasoning.
  • Roast in a 425°F oven for about 30 minutes, or until the internal temperature reaches 145°F. Remove from the oven and let rest.

  • While the pork roasts, mix all sandwich spread ingredients together until smooth. Set aside.

Build the Sandwich

  • Spread a generous amount of the sandwich spread on both halves of the ciabatta rolls.
  • Layer avocado, red onion, bacon, sliced pork tenderloin, and provolone cheese on the bottom half of the bread.
  • Finish with a handful of fresh greens, add the top bun, and serve with extra spread on the side.

Serving Ideas

This Roasted Pork Tenderloin Sandwich is a total chameleon—it plays well with whatever you have in the pantry. Here is how I turn it into a full "real kitchen" winner:

  • The Quick Crunch: Serve it with kettle chips or my Air Fryer Okra. The okra has that same addictive salty crunch as a side of chips. They're so good the kids won't even notice you're sneaking in something green!
  • The Picnic Pairing: You can’t go wrong with a scoop of Creamy Coleslaw or a classic Potato Salad. The cool, tangy creaminess is the perfect cut through the rich bacon and avocado.
  • The Bistro Side: Pair it with a Simple Green Salad tossed in a light vinaigrette. It keeps the meal fresh and light if you’re serving this for a quick lunch.
  • The Hearty Upgrade: For a full dinner, go with Crispy Oven-Roasted Potatoes or thick-cut wedges. They are the ultimate vehicle for dipping into any extra Lemon Chive Spread.
  • The Flavor Pop Add-Ons: If you want to take it over the top, add Quick-Pickled Red Onions or Pickled Jalapeños. That hit of acidity and heat makes the mustard-crusted pork absolutely sing.

Storage & Reheating

  • Roasted pork tenderloin: Store sliced pork in an airtight container in the refrigerator for up to 3 days.
  • Sandwich spread: Keep the lemon chive spread refrigerated in an airtight container for up to 5 days.
  • Assemble fresh: For best texture, store all components separately and assemble the sandwiches just before serving.
  • Reheating: Warm the pork gently in a skillet or in the microwave until just heated through. Toast the bread fresh before assembling to avoid sogginess.

You Asked, I Answered

Do I serve this pork tenderloin sandwich hot or cold?

Both! It’s incredible served warm right out of the oven, but the leftovers make a world-class cold lunch the next day. This versatility makes it a gold mine for meal prep.

Can I make this recipe gluten-free or dairy-free?

Absolutely. For a Gluten-Free version, just swap the ciabatta for your favorite GF sturdy roll. For Dairy-Free, use a plant-based cheese or skip it entirely—the lemon chive spread and avocado provide plenty of creaminess on their own.

What if I don't have Pork Tenderloin?

You can easily swap in Pork Loin or Boneless Pork Chops. Just adjust your roasting time until the internal temperature hits 145°F.

Can I make the spread ahead of time?

Yes. The Lemon Chive Spread actually tastes better after sitting for an hour. Make it up to 3 days in advance and keep it in an airtight container in the fridge.
