The Recipe Rundown
This Slow Cooker Chicken Tacos is so incredibly simple. Here's a brief overview of how to make it!
- Load the slow cooker: Add the chicken, salsa verde, onion, garlic, and seasonings.
- Cook: Cover and cook until the chicken is tender and easily shreds.
- Shred: Remove the chicken, shred it, and set aside.
- Make it creamy: Stir the cream cheese into the hot cooking liquid until smooth.
- Finish: Return the chicken, add lime, and toss until coated.
- Serve: Pile into warm tortillas and add your favorite taco toppings.
Swaps & Variations
These Slow Cooker Chicken Tacos are easy to customize with whatever you already have on hand—here are a few simple swaps that work well.
- Use your favorite salsa: Swap the salsa verde for your favorite red salsa—mild, medium, or hot all work. Pico de Gallo would also be great!
- Use Rotel: No salsa verde? Rotel is an easy pantry swap. I'd drain the liquid if so the finished chicken isn't watery.
- Swap the chicken: Boneless skinless chicken breasts work in place of thighs; just watch the cook time so they don't dry out.
- Use sour cream: For a tangier creamy finish, stir in sour cream instead of cream cheese after the chicken is cooked and the slow cooker is turned off to prevent separating.
- Make it spicy: Use a hot salsa verde, or add jalapeño, serrano, or extra chili powder.
Tips For The Best Slow Cooker Chicken Tacos
A few simple things will keep the chicken juicy and the creamy salsa verde sauce just the right consistency.
- Add the cream cheese at the end: Stir it into the hot cooking liquid after the chicken is cooked for a smooth, creamy sauce.
- Watch the cooking liquid: Chicken releases liquid as it cooks. If there's too much, remove some before adding the cream cheese. You can always add it back to thin the sauce.
- Cook until tender—not forever: The chicken should reach 165°F and easily shred with a fork. Avoid overcooking so it stays juicy.
- Warm the tortillas: A quick char in a dry skillet makes even store-bought tortillas so much better.
- Finish with lime: Add it after cooking to keep that fresh, bright flavor.

Slow Cooker Chicken Tacos Recipe
Equipment
- slow cooker
Ingredients
- 2½-3 lbs boneless, skinless chicken thighs
- 1½ cups salsa verde
- ½ med yellow onion chopped
- 4-5 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 tsp chili powder
- kosher salt and fresh ground pepper to taste
- 4 oz cream cheese softened
- fresh lime juice
Instructions
- Prepare the slow cooker. Add the chicken, salsa verde, diced onion, garlic, and seasonings to the slow cooker. Stir to combine and coat the chicken.

- Cook. Cover and cook on LOW for 4 hours or HIGH for 2 hours, or until the chicken reaches 165°F and shreds easily.
- Shred the chicken. Remove the chicken from the slow cooker and shred using two forks. Set aside, leaving the cooking liquid in the slow cooker.

- Make the creamy sauce. Add the cream cheese to the hot cooking liquid. Stir until completely melted and smooth.

- Combine. Return the shredded chicken to the slow cooker. Add the fresh lime juice and stir until the chicken is evenly coated in the creamy salsa verde sauce.

- Assemble and serve. Spoon the creamy shredded chicken into warm tortillas and finish with your favorite taco toppings. Enjoy!

Storage
These Slow Cooker Chicken Tacos are great for leftovers and meal prep. Store the chicken separately from the tortillas and toppings for the best results.
- Refrigerate: Store the chicken in an airtight container for up to 4 days.
- Reheat: Warm gently on the stovetop or in the microwave, adding a splash of reserved cooking liquid or salsa verde if needed.
- Freeze: Freeze the cooled chicken in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Recipe Testing Notes
- Chicken thighs: I developed this recipe using boneless, skinless chicken thighs because they stay juicy and tender in the slow cooker. Chicken breasts work, too, but may cook a little faster.
- Salsa verde: Heat and saltiness vary by brand, so use one you already enjoy. Its flavor really comes through in the finished chicken.
- Cream cheese: I found that 4 ounces gives the chicken a creamy sauce without overpowering the salsa verde. You want just enough to coat the shredded chicken, not drown it.
