This version is slow-baked creating an incredibly luscious, never dry, evenly-cooked salmon. The consistency created by the low and slow(er) cooking method will change how you look at and prepare any salmon in the future!
Unfortunately, salmon can have a bit of a bad reputation and most of this is due to people having it prepared improperly. My simple oven baked salmon will change your mind if you are on the fence about it and, if you’re already a fan, you’ll love this healthy fish even more!

Not only is salmon incredibly delicious when prepared correctly, it’s also so good for you! It’s full of omega-3s, protein and antioxidants. Salmon doesn’t have any sugar or carbs which is fantastic when you’re trying to watch your weight. Basically, its a swimming vitamin bundle and a win-win in the tastiness/healthiness category!
Prepping the Oven Baked Salmon
For the salmon’s seasoning situation, I keep it simple. See the theme for this recipe? I use my best all-purpose seasoning blend. It’s truly wonderful on everything and anything. However, you can use whatever makes your heart happy. But, listen to Rufus. My seasoning recipe has a fantastic mix of spice drawer staples along with a little dried dill weed. The dill and salmon go together like peas and carrots. (See what I did there?!) Definitely give it a try!
To dress the salmon, drizzle with avocado oil and sprinkle liberally with your seasoning of choice. I use a silicon pastry brush to mix this together and create a nice layer on the salmon. This step takes about 60 seconds. Super simple, super delicious. That’s our goal!
Finishing the Oven Baked Salmon
Once the salmon is prepped and ready for the oven, all it needs is about 20 minutes in at 300ยฐ. After removing the salmon from the oven, let it rest for 10 minutes. This allows for the cooking process to be completed and for the juices to reabsorb back into the salmon. You don’t want to skip this step!
I finish the salmon by showering it with a healthy squeeze of fresh lemon juice. All that’s left to to is enjoy the perfectly cooked, perfectly juicy, simple oven baked salmon!

Time needed: 35 minutes
For the Best Oven Baked Salmon, simply:
- Let the salmon come up to room temp.
Remove the salmon from the fridge and let it rest on countertop for approximately 30 minutes.
- Prep the salmon.
Drizzle salmon withย avocado oilย and sprinkle with all-purpose seasoning.
- Bake.
Bake salmon in a preheated 300ยฐ oven for approximately 20 minutes.
- Allow the oven baked salmon to rest.
Remove from oven and let rest 10 minutes.
- Finishing.
Finish with a liberal squeeze of lemon.

There are different schools of thought when it comes to salmon cooking temperatures. You can cook it at a very high heat, creating a lovely crust and tender middle. I love it prepared that way. Especially on the grill.
However, this recipe has a slightly different approach. I cook the salmon on a lower temperature (300ยฐ), for a longer time. This creates the most buttery, succulent salmon you will ever put in your mouth. It will flake just by looking at it and will absolutely melt in your mouth. You’ve gotta try it!

One of the first ways to check for freshness is with our eyes. Salmon should be bright pink/orange and evenly colored. It should not be pale or dull in anyway. The filets should be plump and vibrant and pleasing to the eye, not suspiciously gray and flat. A tasty salmon filet, is a beautiful salmon filet – even before it hits the oven.
The next way to test for the freshness of salmon is by smell. There should be no off-putting smell at all. Any murkiness coming from the fish is a sign that it has gone bad, and should be discarded immediately. There is no room for putrid salmon. Not now. Not ever.
