how to make air fryer chicken wings
the wings
I buy my chicken wings pre-cut into drumettes and wingettes (or the flats). If frozen, let them thaw. Once thawed, pull them out of the fridge about 30 minutes before you’re ready to cook. I lay mine out in a single layer onto a baking sheet to make this next step easier.
You’ll also want to ensure the wings are super DRY. Use a paper towel and try to absorb as much moisture as possible. This is the first step in making the chicken wings crispy.
Next, in a large mixing bowl, toss the wings in my all-purpose seasoning. This also helps absorb any excess moisture that may still be lingering. Once the wings are tossed in the seasoning, evenly sprinkle baking powder (NOT BAKING SODA) over the wings. The baking powder helps to dehydrate the skin on the wings and makes a big difference in the crispiness of the wing. Toss to ensure the wings are evenly coated in the seasoning and the baking powder.
Preheat the air-fryer to 400ยฐ. Place the wings, skin side down onto the roasting rack, and let them air fry for 10 minutes. Flip them over after 10 minutes, making sure the skin is facing up, and cook for an additional 10 minutes. That’s it! Quick and easy!
the buffalo sauce
You cannot have a classic crispy chicken wing without a classic buffalo sauce. My recipe is super simple. Grab a 2-cup glass measuring cup and slowly melt a stick of butter in the microwave. Whisk in the Frank’s, granulated garlic and onion, white wine vinegar, and Worcestershire sauce. If you want it a little spicier, just throw in some cayenne or crushed red chili flakes.
This buffalo sauce is perfect on the wings, but should you have any leftover, it would make an old shoe taste good!
the ranch
In my opinion, a side of good ranch is a must with any chicken wing. If the ranch dip isn’t good, then it’s just game over. My Air Fryer Chicken wings deserve the best and they’ll get the best.
This ranch dip is super simple because we are going to use a store bought ranch seasoning packet. Just make sure it says “seasoning” on the label. There are other variations and they just don’t taste right to me.
Ignore the ranch packet instructions on the back. Listen to Rufus. All that you have to do is use one part mayo and one part sour cream. Add a healthy scoop of dried dill weed and the contents of the packet. Mix to combine and try not the eat it before the wings are done cooking.
frequently asked questions
No worries! If you do not have an air fryer, use a sheet pan and an oven safe rack. Increase the oven temperature to 425ยฐ and cook the wings until they reach an internal temp of 165ยฐ. Depending on the size of the wings, it may take up to an hour to cook. I suggest turning them every 20 minutes or so to ensure an even crisp of the skin.
The wings themselves are both gluten and dairy-free! Sub the butter in the buffalo sauce for your favorite dairy-free butter or leave it out all together. For the ranch, swap the sour cream for your favorite dairy-free version.
