My version of chicken and dumplings is so easy that I reserve it for our busy evenings. One of my hacks for making this recipe super simple is using a package of pre-made gnocchi from the store.
What's gnocchi you ask? Gnocchi is an Italian potato dumpling. They are wonderful in so many dishes, but as a dumpling for chicken and dumplings, you cannot go wrong. And, they cook in about two minutes. And, they are found in the pasta section of the store. They are a time-saver extraordinaire!

I always keep carrot, onion, and celery on hand because they are the base of so many things. This Chicken and Gnocchi soup is no exception and these veggies are classic components to any chicken and dumplings recipe. I've even seen these already diced up in the deli sections of some larger grocery stores! Easy peasy!
Continuing on the simplicity route, I also love using a rotisserie chicken. There is absolutely nothing easier and they taste phenomenal. I've even seen them already shredded and ready to use.
Like I said earlier, the gnocchi is a no-brainer. A two minute dunk in the broth and these little guys are good to go!
Here's a list of what you'll need:
- Carrot - For a little hit of sweet and color.
- Onion - Because I think they belong in almost every recipe. The savory sweetness is my favorite.
- Celery - Always a necessity in a chicken soup.
- Chicken Broth - Use a good quality one. I have a great bone broth recipe, too!
- Butter - For the roux.
- All-Purpose Flour - To help give the soup a velvety texture.
- Rotisserie Chicken - I love them. They're easy, delicious, and convenient.
- Heavy Cream - To richen the sauce.
- Dried Thyme - For that wonderful earthy, herbaceousness.
- Dried Rosemary - For more deep herb flavor.
- Pre-Made Gnocchi
- Kosher salt and Fresh ground pepper, to taste
How-To make Chicken and gnocchi soup
This Chicken and Gnocchi Soup truly is one of the easiest you will ever make. It's a simple, comfort food recipe that comes together with little time and almost no hassle.
To start, sauté the carrot, onion, and celery in butter until they begin to soften. While stirring the veggies, add in the flour. Continue stirring to prevent any clumping. We don't want any clumps!
After cooking the flour/veg/butter mixture for a few minutes, slowly add in the broth and herbs. Bring this to a simmer and allow it to cook for 15-20 minutes or until the vegetables become tender. Taste the broth at this point to determine if any salt is needed.
Next, add the chicken to the soup. Increase the heat until you reach a low boil.
Now, for the gnocchi portion of our chicken and gnocchi soup! There could not be anything easier. Drop the gnocchi into the boiling chicken soup and cook for two minutes. When they float, they're done.
Turn the heat off, stir in the heavy cream, and serve!

Can I make this chicken and gnocchi soup recipe gluten-free?
Absolutely! Simply swap out the AP Flour for your favorite gluten-free flour. Gluten-free gnocchi are also available. Follow the recipe instructions as normal.
Do I have to use gnocchi?
Absolutely not. If you don't have any or can't find gnocchi in your local grocery store, I would use a small sized-pasta instead.
Tips, Tricks, and Variations
This Chicken and Gnocchi Soup is so easy, but you can customize it and make it your own. I also have a few tips and tricks up my sleeve to make your life easier!
- Use whatever veggies you like or have on hand. This is a fantastic fridge clean out recipe. I've thrown in everything from broccoli to zucchini to turnips. They all work!
- I usually keep packages of gnocchi on hand for a rainy day, but if you don't have any, regular pasta works great!
- If using a rotisserie chicken, debone it while it's warm. It's so much easier!
- Unsweetened Coconut Milk is a fantastic substitution for the heavy cream if there is an issue with dairy. Likewise, you can use avocado oil instead of butter.
- If you don't have chicken, this is a fantastic recipe for seafood. Shrimp, scallops, and even fish cook quickly and could be added just before the gnocchi.

Chicken and Gnocchi Soup
Ingredients
- 1 ½ cups carrot, diced
- 1 ½ cups onion, diced
- 1 ½ cups celery, diced
- 5 tablespoon butter
- 5 tablespoon AP flour
- 6-8 cups chicken broth, warm
- 1 teaspoon dried thyme
- ½ tsp dried rosemary
- 3-4 cups cooked chicken, diced
- ½ cup heavy cream
- 1 16 oz pkg gnocchi
- kosher salt and fresh ground pepper, to taste
Instructions
- Sauté carrots, onion, and celery in butter until softened. Add flour, whisking to eliminate lumps. Cook just a couple of minutes to remove raw flour taste.
- Slowly incorporate the broth while continuing to whisk. Add in herbs. Simmer 15-20 minutes.
- Add in the chicken. Increase heat slightly to a low boil. Add gnocchi and cook until they begin to float - about 2 minutes.
- Turn off heat. Stir in heavy cream. Salt and pepper, to taste. Enjoy!
