Homemade chicken noodle soup is the quick and easy classic comfort food recipe you need in your back pocket at all times. With the help of a rotisserie chicken, this perfectly scratch-made cozy soup comes together in no time.
The ingredients are simple and wholesome, and when combined with homemade bone broth, you are basically making a super food. It's so good for you, and I whip out this recipe when I detect any semblance of a sniffle in anyone I know.
Key Ingredients
Chicken - I make life simpler for myself and use a rotisserie chicken. Any leftover, cooked chicken you have on hand would also be great!
Chicken Bone Broth - My Instant Pot Chicken Bone Broth is the go-to for me instead of plain chicken broth. It's rich and delicious, but chockfull of wonderful things that make it so good for you! This is a simple soup, use a good quality chicken broth if you're not making it from scratch. You'll be able to taste the difference.
Carrots, Celery, Onion, Garlic - The flavor makers and fridge staples. They're the classic soup veggies.
Egg Noodles - The classic noodle for the chicken noodle. Use whatever size you prefer.
Turmeric and Fresh Cracked Black Pepper - You just need a little of both. For color, but mostly for the health benefits. Turmeric is a strong anti-inflammatory and antioxidant. The piperine in black pepper helps you absorb the curcumin in the turmeric. These two things help turn this soup into medicine.
Fresh Parsley - Yes. Fresh, flat-leaf, Italian parsley. It adds a pop of color and a wonderful fresh flavor, but is absolutely full of good-for-you vitamins and minerals. If I'm making homemade chicken noodle soup, especially if it's for someone under the weather, I make a point to get the fresh stuff. It makes a difference.

Substitutions and Variations
Make it creamy. Add heavy cream to make this homemade chicken noodle soup to make it wonderfully rich and luscious.
Make it spicy. Add crushed red pepper flakes or stir in a tiny bit of Calabrian chilies for a kick!
Herbs - Add any herbs you like. I keep it simple with a bit of thyme, but rosemary, tarragon, and even dill would be delicious! Just remember, dried herbs are a bit stronger than fresh.

Skip the noodles. If you're in the mood for a light, delicious soup without the carbs, simply leave them out.
Play with the veggies. Add anything from mushrooms to zucchini to broccoli for the veg portion. Anything you love goes in homemade chicken noodle soup!

Tips and Tricks
Cook noodles to just al dente. They will continue to absorb liquid after cooking and you don't want them to become mushy.
If you want a more brothy soup at the end, cook the egg noodles in a separate pot of salted water. If you cook the noodles in the chicken soup itself, they absorb a bit of broth. It's totally up to you. Either way is great!
Make the soup base without the noodles in bulk and freeze it. It's such a great thing to have on hand in case someone gets sickly or you just need an easy dinner. When you're ready, thaw and cook the noodles in the broth as instructed.

Homemade Chicken Noodle Soup Recipe
Equipment
- dutch oven or large pot
Ingredients
- 2 tablespoon butter or extra virgin olive oil
- 3 ribs celery diced
- 2-3 carrots diced
- 1 medium onion diced
- 3-4 cloves garlic minced
- 10 cups chicken bone broth
- ½ teaspoon dried thyme leaves
- ¼ turmeric
- kosher salt and fresh ground pepper to taste
- 4 cups egg noodles
- 3-4 cups cooked and shredded chicken from a rotisserie chicken
- 2 tablespoon fresh, flat-leaf Italian parsley minced
Instructions
- In a large pot over medium-high heat, sauté the celery, carrots, and onion until they begin to soften.
- Add the garlic, bone broth, thyme, and turmeric. Bring to a low boil. Taste for salt and pepper and add according to your preference. This is the step to make sure your flavors are on point.
- Add noodles and cook to just al dente.
- Lower heat and stir in the chicken to warm through. Check again for salt and pepper. Finish with minced parsley.

Storage and Reheating Instructions
Leftovers stored in the fridge in an airtight container will stay good up to 3 days.
Reheat in the microwave in small increments until warmed through. You can also reheat on the stove top in a sauce pan over medium heat. Add more broth if you feel the noodles have absorbed too much during storage.
Freezer instructions: Do not freeze this soup with the noodles. Upon thawing, the noodles will disintegrate and become fairly off-putting. If freezing, only do so with the soup base of chicken, broth, and veggies. That part will stay good up to 3 months.
