Tips For The Best Ground Pork Stir Fry
A few simple tips help this ground pork stir fry come together fast and flavorful every time.
- Brown the pork first: Let the pork cook undisturbed for a few minutes before breaking it apart for better flavor and texture.
- Don’t overcook the cabbage: Coleslaw mix should soften slightly while still keeping a little crunch.
- Prep the sauce ahead: Stir the sauce together before you start cooking so everything moves quickly once the skillet gets hot.
- Add extra sauce if needed: Serving this over rice or noodles? Double the sauce so everything stays coated and flavorful.

- 8 oz mushrooms thinly sliced
- 4-5 cloves garlic minced
- 1 med yellow onion thinly sliced

Make It A Full Family Meal
Here is how I turn it into a full weeknight dinner that my family requests on the regular.
- The Classic Base: Serve it over fluffy white rice or quick-cooking ramen noodles. For a lower-carb win, it’s incredible tucked into crunchy lettuce cups.
- The Soup & Salad Start: Start the meal with a warm bowl of my 15-Minute Egg Drop Soup. It’s the ultimate "comfort food" pairing that keeps the prep time under 30 minutes.
- The Green Side: Add some green to the plate with my Roasted Bok Choy. The charred, salty edges are the perfect contrast to the sweet chili pork.
- The Extra Crunch: Serve these with a side of Frozen Potstickers in the air fryer and the irresistable dipping sauces.
- The Noodle Upgrade: If you want to bulk this up, toss the pork mixture directly into a bowl of my Peanut Noodles. The creamy peanut sauce and the savory pork are a match made in heaven.
Storage & Reheating
- Store it: Leftovers will keep in an airtight container in the fridge for up to 3 days. The flavors actually get even better as they hang out together.
- Reheat it: Pop it in the microwave in short bursts until warmed through. And unless you’re looking to redecorate the inside of your microwave, cover it with a damp paper towel. (Ask me how I know.)
- Freeze it? Hard pass. Cabbage does not survive freeze-thaw — it turns soft, soggy, and a little woof. Stick to refrigerating this one.
I Asked, You Answered
Can I use bagged coleslaw mix for stir fry?
Yes. Coleslaw mix is one of the easiest shortcuts for ground pork stir fry because the cabbage and carrots cook quickly and soak up the sauce beautifully.
How do I thicken the stir fry sauce?
If you want a thicker sauce, stir together a little cornstarch and cold water, then add it to the skillet during the last minute or two of cooking.
Why is my stir fry watery?
This usually happens when the pan isn’t hot enough or the vegetables release too much moisture. Let the pork brown well and avoid overcrowding the skillet.
Can I meal prep this recipe?
Absolutely. This ground pork stir fry reheats well and makes great leftovers for lunches throughout the week.
