Philly Cheesesteak Egg Rolls. I mean the name alone is enticing. But, paired with the creamy, savory beer cheese sauce, they are drool-worthy. It is a proven, calculated fact that you will not be able to eat just one.
I keep the recipe simple and make a wonderfully creamy egg roll mixture using ground beef with the classic onions and peppers. The mixture is spooned and rolled into egg roll wrappers and air fried to eliminate the need for deep frying and the associated mess. The cheese sauce comes together in just a few minutes and I cannot adequately put into words how good it is. I could drink it.
Make this recipe for a fun weeknight family dinner when you need something out of the regular rotation, for a phenomenal game day appetizer, or for your next party. Not gonna lie, I've made these for myself when I wanted a treat. I stand by this decision. Egg roll. Beer Cheese. Do it. You will not be disappointed.

Guys, I'm so excited! This is one of those recipes I absolutely love to eat, but it's really fun to make, too!

To begin, let's address our egg roll filling. Brown the ground beef along with the onions and bell pepper. Add the granulated garlic and onion with the Worcestershire sauce. When the beef is cooked through, stir in the softened cream cheese until everything is well combined. Let the mixture cool just a bit.
To fill our Philly Cheesesteak Egg Rolls, lay out the egg roll wrapper. Spoon the mixture in the middle of the wrapper. Top with a half slice of the provolone cheese. Dip your finger in a little water and run it along the perimeter of the egg roll wrapper. This is to help the wrapper seal.
Fold and roll. Just like a burrito!
Coat the egg rolls evenly with spray oil and into a preheated 400° air fryer they go until nice and crispy - about 15 to 20 minutes. I turn mine about halfway through to make sure every surface becomes crispy.

While the egg rolls do their thing in the air fryer, let's make the beer cheese sauce. It's so good you could dip a shoe into it and think that was the best thing you ever ate.
Melt the butter in a cast iron skillet. Add the flour, whisking constantly for a few minutes to cook out any raw flour taste. Slowly whisk in the beer and milk. Keep whisking to prevent any clumps from forming. Add the granulated garlic and onion, salt and pepper, Worcestershire sauce, and the whole grain mustard.
Once the mixture is smooth, remove the skillet from the heat or turn the heat to very, very low. This is key to prevent a grainy cheese sauce.
Slowly, add in the grated cheese. Whisk the cheese until it melts and let the residual heat from the skillet do the work. If you want your beer cheese sauce a little thiner, feel free to add some warm milk or cream.

Can I make these Philly Cheesesteak Egg Rolls in the oven?
Absolutely! Instead of using the air fryer, put them in a 425° oven and cook for about 15 - 20 minutes, turning about halfway through. Check for crispiness and if they need to go a little longer, let them. You just want to make sure they get nice and crispy!
Can I make these ahead of time?
Yes! These egg rolls would be fantastic made ahead of time. You can make them up to a full day ahead of cooking. Roll them, but don't spray with oil and store them in the fridge in a covered container. When you're ready, remove them from the fridge, spray with oil, and cook as laid out in the recipe.
The beer cheese sauce could be made 2-3 days in advance. To reheat, do so slowly on the stove top. Add a little milk or cream to loosen it up if needed.
Can I freeze the egg rolls?
The egg rolls freeze very well. Make them, but don't spray with oil or cook. Store them in a freezer safe zip top bag for up to 3 months. When you're ready, remove them from the freezer, spray with oil and into the air fryer they go! You'll just need to cook them for a few minutes longer if you cook from frozen.
What kind of beer should I use for the beer cheese sauce?
Whatever you like to drink! You can use your favorite beer for this part of the recipe. Just make sure it is something you enjoy. Alcohol-free beers are also a great option. I would stay away from especially fruity or specialty flavored beers, though.

- Don’t overfill the egg rolls. Too much filling can cause an egg roll explosion and no one needs that.
- Seal the egg roll wrappers with a little water. Use your finger or pastry brush to create a perimeter with the water. It will help the wrapper stick to itself.
- Make sure the egg rolls are sealed completely for the best result.
- DO NOT USE PRE-SHREDDED CHEESE for the sauce. It will turn into a gloopy mess and you will be sad. I do not want you to be sad. Shred your own.
- When adding the shredded cheese to the beer cheese sauce base, do so over very low or no heat. This helps to prevent graininess in the cheese sauce. LOW HEAT or NO HEAT.
- I love to add a little hot sauce to my beer cheese for kick. Something about that vinegary spice is soooo good!
- If you like a thinner sauce, just add a little warm milk or cream.

- Use rotisserie chicken instead of ground beef. Just fold the rotisserie chicken into the onion/pepper mixture and proceed. I love this variation!
- If you like things a little spicier, add jalapeños to the egg roll filling. Sauté them along with the bell pepper and onion for great flavor and heat.
- You can turn these into Philly Cheesesteak Wontons. Just use the smaller wonton wrapper instead of the large egg roll wrapper.
- Use steak instead of ground beef if you like. I love the simplicity of the ground beef because I don't have to slice anything.

- If store in the fridge in an airtight container, the Philly Cheesesteak Egg Rolls will stay good for up to 3 days.
- To reheat the egg rolls, simply pop them back in the air fryer on 400° for just a few minutes or until crisp.
- You can also reheat these in the microwave, but they will not be crunchy.
- To reheat the beer cheese sauce, warm slowly in the microwave or stovetop. Add a splash of milk to loosen it up a bit if needed.

- 1 teaspoon kosher salt
- ½ teaspoon granulated garlic
- ½ teaspoon granulated onion
- ¼ teaspoon fresh ground pepper
- 3 cups cheddar cheese, shredded
