If there was ever a recipe that kids and adults can agree one, it is Ground Beef Stroganoff. It's the noodles, it's the beef, and it's the creamy mushroom sauce. There is not a person I know that would not devour this simple, delicious meal.
It's so easy to make and takes very little time. It's an elevated version of the old school meals in a box that not only tastes better, but is way, way better for you. This 30-minute, one-pot meal checks all the boxes for comfort and convenience.
Make this Ground Beef Stroganoff for busy weeknights when you're go-go-go with all the things, on the weekends when you want comfort food with minimal effort, or just whenever you need a simple hug in a bowl. This recipe is all of those things. I hope you love it as much as we do!
A Word About Cookware
I am not a fan of a ton of gadgets in the kitchen. What I do prefer is basic, good quality equipment.
For this ground beef stroganoff, I highly suggest using a heavy duty, cast iron braiser. It is a workhorse in the kitchen and I use mine all the time.
The size is fantastic and because it's heavy, it will retain the heat you need to not only cook the beef and veggies, but maintain that heat so that cooking the noodles happens quickly.
Cookware makes and difference and this is certainly an example of that.


To Roux or Not To Roux
Many beef stroganoff recipes include instruction for a roux, or a fat/flour mixture used to thicken a sauce. Because we are cooking the egg noodles in the same pot as the ground beef and mushrooms, there is no need to do a roux. The starches from the egg noodles will thicken the sauce. One less step and one less pot!
Frequently Asked Questions
Can I make this recipe gluten-free?
All you need to do to make this beef stroganoff gluten-free is swap out the noodles. Gluten-free egg noodles are widely available.
Is there a dairy-free option?
For the dairy-conscious peeps, the only part of this recipe you would need to substitute is the sour cream. Just use your favorite DF option. Otherwise, you could just skip it all together and still have a wonderful dish!

Variations and Substitutions
- Use whatever ground protein you love. Ground chicken, turkey, or pork would be fantastic. I've even used venison and elk for this recipe.
- Play with the veggies. Add whatever you like. Anything from carrots and celery to asparagus and zucchini would be great!
- Make it spicy! Add some cayenne or chili flakes to the mix for a fun kick!
- If egg noodles aren't your thing, potatoes, polenta, or rice would be a lovely bed for the beef stroganoff sauce. If doing this, simply reduce the broth in this recipe by about half.
- This recipe would be perfect for spaghetti squash noodles or zucchini noodles. If using these substitutes, just cut the broth amount in half or it will become too soupy.


Ground Beef Stroganoff Recipe
Ingredients
- 1-1½ lbs ground beef
- 1 med onion, diced
- 8-10 oz mushrooms, thick sliced use your favorite mushroom
- 3-4 cloves garlic, minced
- 2 tablespoon fresh thyme 2 teaspoon if using dried thyme
- 2 tablespoon Worcestershire sauce
- 2 tbsp dijon mustard
- 1 cup sour cream measure this with your heart
- kosher salt, to taste
- fresh ground pepper, to taste
- 1 16 oz pkg egg noodles
- 5 cups beef broth
Instructions
- To start, in a large braiser or heavy-bottomed dutch, oven over medium-high heat, sauté the onions and mushrooms in butter for a few minutes.
- Add the ground beef, season with salt and pepper, to taste.
- Once the beef if cooked through, add the garlic, Worcestershire sauce, dijon mustard, and thyme. Stir to combine. Check for salt and pepper. Add more if you like.
- Add the egg noodles and broth, simmering and stirring often, until the noodles are cooked to just al dente. Remove from heat and stir in sour cream.
- Enjoy!

Storage and Reheating Instructions
- Store leftovers in the fridge for up to 3 days.
- To reheat, cover with a damp paper towel and microwave in small increments until warmed through. You may need to add a little broth to loosen up the sauce a bit. The noodles can absorb a bit of liquid during storage.
- I do not recommend freezing this recipe. Noodles in sauce don't thaw out that will.
