Grinder Salad Recipe
Ingredients
Dressing
- 1 cup mayonnaise
- ¾ cup parmesan, grated
- ⅓ cup peperoncinis, minced mild banana peppers are a great substitute
- 2 tablespoon red wine vinegar
- 2 tablespoon fresh parsley, minced
- 1 tablespoon peperoncini juice
- 2 teaspoon dried oregano
- salt and pepper, to taste
- red chili flakes, optional
Salad
- 1 head iceberg, thinly shredded
- 1 cup tomatoes, diced
- 1 cup cucumbers, diced
- ½ red onion, thinly sliced
- ½ cup deli ham, thinly sliced
- ½ cup salami, diced ,
- ½ cup provolone cheese, sliced and cut into strips
- fresh parsley leaves, to taste
Instructions
- Mix all dressing ingredients together in a bowl. Set aside.
- Toss lettuce, veggies, ham, salami, and cheese together.
- Add fresh parsley leaves to your taste.
- Mix everything together with copious amounts of the dressing and enjoy!

This grinder salad is also super simple and I bet, if you're like me, you have most of the ingredients in the fridge or the pantry at all times. It's one you can throw together in a moments notice and it'll be on constant rotation once you try it!

Tips, Tricks, and Variations
- Make it a sandwich. Chop all of the grinder salad ingredients (including the dressing) into small, bite-sized pieces. Spoon the chopped salad onto your favorite sandwich bun. It's reallllll good!
- Meal prep. This salad is perfect for meal prepping because it's hearty. Divide everything into meal prep containers and put the dressing on the side in small glass container. Lunch is done for the week!
- Make it spicy. Calabrian chilis would be amazing added to the dressing or tossed with the salad itself.
- Proteins. Use any you like. Everything from rotisserie chicken to grilled shrimp and steak would be so good.
- Make the salad dressing ahead of time. The longer it sits, the better it gets.
